The Waterside Inn - Bray
"After only recently discovering Gigha Halibut it would be true to say that I am a complete convert to this beautiful smoked fish. It not only has a really great taste but it is visually appealing too. I recently offered this to guests attending The Waterside Inn’s 40th birthday party and it very quickly vanished. There can be no greater compliment than that from 300 of my best customers who I believe all have a very discerning palette!"
Alain Roux - The Waterside Inn
The Peat Inn - Fife
"I adored Smoked Gigha Halibut from my first mouthful. This perfectly textured smoked fish is an exciting and distinguished alternative to the ubiquitous smoked salmon. I particularly love the delicate cure and the firm texture. The balance of smokiness and sweetness is perfectly judged by skilled producers who really understand what they are doing. I am never without Smoked Gigha Halibut ; I am convinced that once you taste it, you will be a convert too."
Geoffery Smeddle - The Peat Inn
The Three Chimneys - Isle of Skye
"Sourcing new ingredients for the menu at The Three Chimneys is a necessary process in maintaining the highest level of dining experience for our customers. “Gigha Halibut” not only meets the vital requirements of quality, consistency, sustainability and provenance, it has been inspirational in the creation of new dishes."
Michael Smith - The Three Chimneys
Scott's - London
“At Scott’s, we currently have Smoked Gigha Halibut on the menu with fried oysters and ravigote dressing. It’s a versatile fish, so we’re fairly experimental with it. In keeping with our sourcing philosophy at the restaurant, it comes from sustainable sources on the breathtaking island of Gigha in the southerly Hebrides. It is smoked to order for us, so the freshness is unparalleled. The flavour is delicate – not too heavily smoked – and the balance is perfect, offsetting more complex flavours like the ravigote dressing. The fillets are tender, the flakes are succulent and I have to say, we’re very pleased with this product. Our customers like it, and if our customers are happy, we’re happy!”
David McCarthy - Scott's
Babylon at The Roof Gardens - Kensington
"As a recent winner of the “most improved” sustainable restaurant in the country as awarded by the sustainable restaurant association it is of great importance to me were my ingredients come from and I believe that both the end product and the way the gigha halibut is produced ticks all the right boxes for the discerning guest and the sustainably conscious chef. Gigha halibut offers a truly first class product that could be utilised in many different ways to enhance a menu."
Ian Howard - Babylon
